We sit on a quiet street in Roma Norte, behind a plain door and a wall of plants. Mornings start with the smell of butter and caramelized sugar, then shift to chilaquiles and cilantro by nine. The space is small but it works. Regulars grab takeaway, and people who came to see what the fuss is about end up staying.

Why does it cost more than my usual bakery?

The croissants are laminated by hand over two days and we use real butter and good flour. That takes time and costs more. You taste it in every layer.
